I made this tonight when family visited for dinner – full of mouth-watering anticipation and although it was ‘OK’ it wasn’t mind-blowing as I expected. I followed the recipe to the letter, having ingredients at room temperature, used the correct sized tin but so disappointed to find the cake layer was quite dry. My oven is fan-forced so perhaps I overcooked it although it was in for less time than on recipe.

Loved it! I made this yesterday as blueberries are so cheap at the moment, and we have too many lemons on our tree. It turned out beautiful to look at and so tasty. Not as sweet as I was expecting, and would be perfect with a cup of tea after a morning in the garden. We enjoyed it heated up with some vanilla ice cream which made a lovely light dessert.

In reply to Cleo. Hi Cleo! Just concerned the blueberry layer may weep a little too much when thawing. Taste wise and structurally though, no problems! And once warmed it would solve any bleeding visuals because it becomes syrupy anyway. :) sorry I can’t give a definitive answer! N x
